La fabrication de la raclette Jean Perrin respecte la plus pure tradition du Jura franco-suisse : son lait riche et onctueux provient de vaches pâturant dans les prairies du massif du Jura, son affinage lent, en cave tempérée à Cléron, est surveillé constamment par le maître de cave Jean Perrin. 

Raclette is a semi-hard cow's milk Swiss (French) cheese. It is most commonly used for melting based on heating the cheese and scraping off (French: racler) the melted part. It is accompanied by small firm potatoes, gherkins, pickled onions and dried meat, such as viande des grisons, and to drink, Fendant white wine.
