Feyel, Mousse de Foie de Canard –duck liver mousse. Mousse is an emulsion of foie gras (minimum 50%) with the addition of duck fat. For the manufacture of duck foie gras liver uses only two kinds of ducks: Muscovy ducks and mulard, and only males. Although it is believed that the taste differences between goose and duck liver are small, yet they are, and a real gourmet accurately distinguish foie gras. Duck foie gras has a rich aroma and a distinct and sharp taste than goose.
Mousse of duck livershould be served slightly chilled with baguette or other fresh bread accompanied by a dry white (best Alsatian) wine or red wine from Pinot Noir. Mousse breaks off a piece of the fork and put on bread, it is advisable not to smear.
