Hanging tender, or hanger steak, is a highly flavorful, tender cut from the cow’s diaphragm, often called “butcher’s steak” because butchers historically kept it for themselves. It is a V-shaped muscle (best served medium-rare) that is often grilled or pan-seared and must be cut across the grain.
