The Fine de Claire has an elongated shell, with a softer-coloured flesh that yields a salty and nutty flavour. They are also mostly cultivated in Marennes, France, where they are divided by their maturity into Fine de Claire, These oysters are finished for several weeks in shallow clay ponds where they acquire a superior quality shell to oysters grown in the open sea. These oysters have a delicate yet complex taste profile, with a fresh oceanic flavor, a hint of sweetness, and a subtle mineral finish. They have a firm and meaty texture with a briny and slightly buttery finish, making them an ideal ingredient for a wide range of gourmet dishes.
